This is a delicious recipe loved by both adults and kids. A muffin is always a WOW! But homemade muffins are really special. try this at home and enjoy with your children.
Ingredients:
1. 1/2 cup unsalted butter, melted and cooled well.
2. 2 Eggs.
3. 1 cup (240 ml) Buttermilk.
4. 2 teaspoons of pure Vanilla extract.
5. 230 grams all-purpose Flour.
6. 2/3 cup unsweetened Cocoa powder.
7. 265 grams light Brown Sugar.
8. 1 teaspoon Baking powder.
9. 1 teaspoon Baking Soda.
10. 1/2 teaspoon salt
11.1 cup Milk or semisweet Chocolate Chips.
Procedure:
Preheat your oven to 375 degrees F (190 degrees C). Position rack in the center of the oven. You can use Butter, or line with paper liners, 12 - 2 3/4 x 1 1/2 inch muffin cups.
Next, in a large measuring cup or bowl mix and beat properly together the eggs, buttermilk, and vanilla extract.
In another large bowl mix well together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Stir in the chocolate chips. With a rubber spatula fold the wet ingredients, along with the melted butter, into the dry ingredients and stir only until the ingredients are mixed well together. Do not over mix the batter or the muffins will become tough ones.
Evenly fill the muffin cups with the batter (the muffin cups will be full), using two spoons or an ice cream scoop. Place all in the oven and bake until a toothpick inserted in the center of a muffin comes out clean, which can be about 20 minutes. Transfer to a wire rack and let cool for about 5 minutes before removing from the pan.
Chocolate Frosting: Melt the chocolate in a heatproof bowl placed over a saucepan of simmering water. Remove from heat and let cool to room temperature.
In the bowl of your electric mixer, or with a hand mixer, beat the butter until smooth and creamy (about 1 minute). Add the sugar and beat until it is light and fluffy (about 2 minutes). Then beat in the vanilla extract. Add the chocolate and beat on low speed until incorporated properly. Increase the control to medium-high temperature and beat until frosting is smooth and glossy (about 2 -3 minutes). Spread a little frosting on each muffin with a knife or offset spatula.
This total procedure will make 12 - 14 regular sized muffins.
